20 minute Fish Taco Bowl

These Fish Taco Bowls are a great weeknight meal. The base of cilantro lime rice, is topped with spiced black beans, fresh tomatoes and grilled white fish then finished with a jalapeño cilantro dressing. This recipe can also be enjoyed as tacos or a burrito.

INGREDIENTS

  • Cilantro Lime Rice – The base of this is bowl is brightened up rice with cilantro and lime. Can be made with white or brown rice
  • White Fish – This bowl is super versatile when it comes to choice of protein! It’s made with flakey cod fish, but can be easily substituted for another white fish like halibut or tilapia. It could also be made with other seafood like salmon or shrimp!
  • Spiced Black Beans – seasoned up black beans, but can also be made with any beans you have on hand.
  • Fresh Tomatoes – add a great fresh bite to the dish.
  • Avocado – adds great creaminess to the bowl.
  • Jalapeño Cilantro Dressing – easy homemade dressings. Not too spicy, super light and goes great on salads, chicken, steak, fish, tacos and more!

Fish Taco Bowl

Ingredients
  

Grilled Fish

  • 1 pound white fish, cod, tilapia, or halibut
  • 1 tsp smoked paprika
  • ¼ tsp cumin
  • salt and pepper, to taste

Black Beans

  • 1 (14oz) can black beans
  • ½ tsp each: chili powder, garlic powder, onion powder
  • salt to taste

Base and Toppings

  • 3 servings cilantro lime rice, recipe linked above
  • cherry or grape tomatoes, cut in slices
  • 1 avocado, cut into slices
  • 1 lime, cut into wedges
  • jalapeño cilantro dressing, linked above

Instructions
 

  • Prepare the fish by mixing together smoked paprika, cumin, salt and pepper. Pat dry fish then season both sides with seasoning mix.
  • On a grill pan over medium heat, cook fish for 3-5 minutes on each side depending on thickness of fish. Fish should be opaque and flakey once cooked through.
  • In a small sauce pan, heat black beans and season with spices.
  • Prepare rice according to directions. Then slice tomatoes and avocado.
  • To assemble, portion out rice into 3 bowls, top with fish, beans, and tomatoes. Drizzle with jalapeño cilantro dressing and an extra squeeze lime juice on top.
