STORING THE RICE
This rice lasts up to 5 days in the fridge. Reheat in the microwave or sauté it quickly on the stove top. Squeeze a bit of lime juice on top to brighten it back up.
Cilantro Lime Rice
Ingredients
- ½ tbsp olive oil
- 1 garlic clove, grated
- 1½ cups long grain rice, like basmati
- 3 cups water
- ½ cup chopped cilantro
- 1-2 limes
- ¼ tsp salt
Instructions
- Heat a pot over medium heat. Add in olive oil then add in grated garlic. Sauté for a minute until fragrant and translucent.
- Add in rice and sauté for 1-2 minutes until translucent, then add in water. Bring to a boil, then let reduce to a simmer to cook until liquid is absorbed, about 15-20 minutes. Once cooked remove from heat and let cool slightly.
- Once rice a cooled slightly, mix in cilantro, lime zest, juice of 1 lime and salt. Taste and add more lime juice and salt if desired.
