Cilantro Lime Rice

Cilantro Lime Rice is the perfect way to brighten up your typical side of rice. Super simple to make with only 5 ingredients, it’s the perfect addition to eat with a plate of seafood or as the base for a burrito bowl.

WAYS TO SERVE CILANTRO LIME RICE

This rice pairs well with Latin, Indian and Asian Flavors.

Serve it in a burrito bowl like this Easy Taco Salad Bowl or this Fish Taco Bowl

As a side to these Carne Asada Steak Tacos

STORING THE RICE

This rice lasts up to 5 days in the fridge. Reheat in the microwave or sauté it quickly on the stove top. Squeeze a bit of lime juice on top to brighten it back up.

Cilantro Lime Rice

Servings 6 servings

Ingredients
  

  • ½ tbsp olive oil
  • 1 garlic clove, grated
  • 1½ cups long grain rice, like basmati
  • 3 cups water
  • ½ cup chopped cilantro
  • 1-2 limes
  • ¼ tsp salt

Instructions
 

  • Heat a pot over medium heat. Add in olive oil then add in grated garlic. Sauté for a minute until fragrant and translucent.
  • Add in rice and sauté for 1-2 minutes until translucent, then add in water. Bring to a boil, then let reduce to a simmer to cook until liquid is absorbed, about 15-20 minutes. Once cooked remove from heat and let cool slightly.
  • Once rice a cooled slightly, mix in cilantro, lime zest, juice of 1 lime and salt. Taste and add more lime juice and salt if desired.
