This breakfast or brunch sandwich is super easy and straight forward to make! Toasted everything bagel, with pesto, avocado, turkey bacon, a fried egg and mixed greens.
I love a savory breakfast in the mornings and this bagel sandwich definitely hits the spot! Simple bacon and egg sandwich elevated with the addition of pesto and avocado.

Pesto & Egg Bagel Sandwich
Ingredients
- 1 bagel of choice, I used an everything bagel
- 2 tbsp olive oil, divided
- 2 slices turkey bacon
- 1-2 eggs
- 2 tbsp pesto
- small handful of mixed greens
- ¼ of an avocado
Instructions
- Cut bagel in half and toast until golden brown. Set aside.
- In the meantime, heat a non-stick pan on medium heat. Add olive oil, once hot add slices of bacon. Fry until golden brown and crispy. About 2-3 minutes per side. Once cooked let drain on a paper towel.
- In the same pan, reduce heat to low-medium and add another tablespoon of olive oil to cover bottom of pan. Once hot, crack egg into oil. Cook until edges are golden brown, about 1-2 minutes. Cover with lid for a more well done yolk if preferred. Season with salt and pepper once cooked.
- To assemble sandwich, spread pesto on bagel, add greens, bacon, egg, and slices of avocado. Season with extra salt and pepper to preference.
