Salmon Tacos with Mango Avocado Salsa
Ingredients
Salmon
- 1 pound salmon filet
- 1 tbsp brown sugar
- ½ tsp each: cumin, chili powder, garlic powder, onion powder
- ¼ tsp smoked paprika
- ¼ tsp salt
Mango Avocado Salsa
- 1 avocado, diced
- 1 small mango, diced
- 1 jalapeño, seeds removed for less spice
- 1 small shallot, finely chopped*
- ¼ cup cilantro, chopped
- juice of 1 lime

- 6 corn tortillas

Salmon
- Cut salmon into about 6 even strips. In a small bowl combine seasonings and season all sides of salmon. Cover then set aside in fridge while you prepare the salsa.
- Once ready to cook, heat a cast iron skillet over medium heat.
- Cook salmon for about 2-3 minutes on all sides.
Mango Avocado Salsa
- Combine all salsa ingredients in a small bowl. Salt to taste.
- *for a less pungent onions taste, soak diced onion in cold water then drain before adding to salsa.
Tacos
- In the same pan the salmon was cooked, heat the tortillas on both sides for about a minutes until warmed and softened.
- To serve, add a piece of salmon, mash it down slightly with a fork. Top with salsa and a squeeze of lime, if preferred.
