Salmon Tacos with Corn Avocado Salsa
Ingredients
- 1 pound salmon, recipe linked above
- 6 small tortillas, corn or flour
Corn and Avocado Salsa
- 1 cup frozen roasted corn, thawed
- 1 ripe avocado
- 1 small shallot
- 1 lime
- ¼ cup chopped cilantro
- salt and pepper to taste
Instructions
- To make salmon, prepare recipe as instructed.
- To make salsa, thaw corn. Remove seed from avocado and dice. Dice shallot finely. Chop cilantro. Place in a small bowl.
- Mix salsa, season with lime juice and salt and pepper to taste.
- To assemble, flake salmon and fill taco with meat and salsa. Squeeze with extra lime if preferred.
