Bruschetta Chicken Burgers

Juicy chicken burgers topped with melty mozzarella and a fresh tomato, garlic and basil mixture. This bruschetta topping is a great fresh and flavorful way to mix up your usual burger combinations.

WHAT IS BRUSCHETTA?

Bruschetta is an Italian appetizer or antipasto often served cold. Its base is toasted bread with olive oil and salt then rubbed with garlic. The toppings for the toast can vary from fresh tomatoes, veggies, beans, cured meats and cheese. The most popular variation consist of a mix of fresh tomato, olive oil, garlic, basil, and mozzarella or parmesan cheese.

These burgers make for a great quick weeknight meal. Comes together in less than 30 minutes and disappear even quicker!

The bruschetta mix piled on top of the melty cheese burger makes for a flavorful and fresh twist on your typical burger you never knew you were missing. They’re a great meal to enjoy that’ll have you wanting the warmer summer months to come even quicker!

Bruschetta Chicken Burgers

Servings 4 burgers

Ingredients
  

Bruschetta

  • 3 roma tomatoes, diced
  • 1 clove of garlic, finely minced
  • ¼ cup basil leaves cut into ribbons (chiffonade)
  • 3 tbsp Parmesan cheese, grated
  • 1 tbsp olive oil
  • ½ tbsp Balsamic vinegar
  • salt and pepper, to taste

Burger

  • 1 pound ground chicken
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • ½ tsp parsley
  • ¼ tsp dried thyme
  • ¼ tsp salt

Toppings

  • 4 hamburger buns
  • 4 slices Mozzarella cheese
  • Balsamic glaze, optional but recommended

Instructions
 

Bruschetta

  • Mix together all the ingredients and set in fridge to allow flavors to come together while you prepare the burgers.

Burgers

  • Mix together all ingredients, then divide meat into 4 patties, about 1 inch thick. Press an indent into the center of each patty.
  • Cook the burgers in a non-stick pan over medium heat for 5-7 minutes on each side. For the last minute on the second side, place the slice of cheese over each patty to melt.
  • Meanwhile, toast the buns until golden brown.

To assemble

  • Place the burgers on top of the buns, top with tomato mix and drizzle with balsamic glaze.
