Salmon Tacos with Corn Avocado Salsa

Servings: 6 tacos

Ingredients
  

  • 1 pound salmon, recipe linked above
  • 6 small tortillas, corn or flour
Corn and Avocado Salsa
  • 1 cup frozen roasted corn, thawed
  • 1 ripe avocado
  • 1 small shallot
  • 1 lime
  • ΒΌ cup chopped cilantro
  • salt and pepper to taste

Method
 

  1. To make salmon, prepare recipe as instructed.
  2. To make salsa, thaw corn. Remove seed from avocado and dice. Dice shallot finely. Chop cilantro. Place in a small bowl.
  3. Mix salsa, season with lime juice and salt and pepper to taste.
  4. To assemble, flake salmon and fill taco with meat and salsa. Squeeze with extra lime if preferred.
