Salmon Tacos with Corn Avocado Salsa

Ingredients
  

  • 1 pound salmon, recipe linked above
  • 6 small tortillas, corn or flour

Corn and Avocado Salsa

  • 1 cup frozen roasted corn, thawed
  • 1 ripe avocado
  • 1 small shallot
  • 1 lime
  • ΒΌ cup chopped cilantro
  • salt and pepper to taste

Instructions
 

  • To make salmon, prepare recipe as instructed.
  • To make salsa, thaw corn. Remove seed from avocado and dice. Dice shallot finely. Chop cilantro. Place in a small bowl.
  • Mix salsa, season with lime juice and salt and pepper to taste.
  • To assemble, flake salmon and fill taco with meat and salsa. Squeeze with extra lime if preferred.
