Udon noodle stir fries have become one of my favorite meals to make recently. They super quick, easy to make, and versatile as you can easily swap out what every protein and veggies you have on hand. Like in this Beef Udon Stir Fry.

Shrimp Udon Stir Fy
Ingredients
Shrimp
- 1 lb shrimp, peeled and deveined
- ½ tsp garlic powder
- ¼ tsp white pepper
- ½ tsp onion powder
- salt and pepper, to taste
Sauce
- ⅓ cup low-sodium soy sauce
- 2 tbsp oyster sauce
- ½ tbsp cornstarch
Other
- 1 pound frozen broccoli
- 2 cups shredded carrots
- 3 small bok choy, leaves separated
- 3 cloves grated garlic
- 1 tbsp grated ginger
- 6 servings cooked udon noodles
Garnish, optional
- greens of scallions
- sesame seeds
Instructions
- In a bowl, add shrimp garlic powder, white pepper, onion powder, salt and pepper. Mix until evenly combined.
- In a small bowl, ,mix together sauce ingredients and set aside.
- Heat a large frying pan over medium-high heat and add olive oil. Add the shrimp and cook for 2 – 3 minutes on each side until golden brown and just cooked. Cook in batches if needed as to not over crowd pan.
- Remove the shrimp from the pan, add the veggies, and about 3-4 tbsp of water. Cover with lid and let steam for about 10 minutes or until softened. Mix about half way through.
- In the meantime, heat up udon noodles per package directions, drain, toss with a tsp of oil to avoid sticking, and set aside.
- Once veggies are done, add back cooked shrimp, noodles, and sauce. Toss until evenly combined. Garnish with greens of scallions and sesame seeds.
