Beef Udon Stir Fry

This Beef Udon Stir Fry is done in under 30 minutes and makes for the perfect weeknight meal.

This dish is super versatile which makes it a great go-to meal when you don’t know what to make.

Substitute the beef for any protein of choice – chicken or shrimp would work great in this!

Substitute the veggies for what you have on hand – bell peppers, mushrooms, or even zucchini could be used!

Beef Udon Stir Fry

Ingredients
  

beef

  • 1 pound shaved beef
  • 1.5 tbsp cornstarch
  • ½ tsp garlic powder
  • ¼ tsp white pepper
  • 2 tbsp olive oil

Sauce

  • 3 tbsp low-sodium soy sauce
  • 1.5 tbsp oyster sauce
  • ½ tsp sesame oil

stir-fry veggies

  • 1 cup julienned carrots
  • 2 cups broccoli florets, frozen or fresh

other

  • 2 (~200g) packages cooked udon noodles
  • chopped scallions, for garnish

Instructions
 

  • In a bowl, add beef (separate into smaller pieces if needed), cornstarch, white pepper, and garlic powder. Mix until evenly combined.
  • Heat a large frying pan over medium-high heat and add olive oil.
  • Add the coated beef and fry for 2 – 3 minutes until golden brown and just cooked. Cook in batches if needed as to not over crowd pan.
  • Remove the beef from the pan, add a drizzle of olive oil, add the veggies, and a sprinkle of salt and black pepper.
  • Sauté until veggies are softened, about 6-7 minutes.
  • In the meantime, heat up udon noodles per package directions, drain, toss with a tsp of oil to avoid sticking, and set aside.
  • In a small bowl, mix together sauce ingredients.
  • Once veggies are done, add back in beef, noodles, and sauce. Toss until evenly combined.
