Beef Udon Stir Fry

Ingredients
  

beef
  • 1 pound shaved beef
  • 1.5 tbsp cornstarch
  • ½ tsp garlic powder
  • ¼ tsp white pepper
  • 2 tbsp olive oil
Sauce
  • 3 tbsp low-sodium soy sauce
  • 1.5 tbsp oyster sauce
  • ½ tsp sesame oil
stir-fry veggies
  • 1 cup julienned carrots
  • 2 cups broccoli florets, frozen or fresh
other
  • 2 (~200g) packages cooked udon noodles
  • chopped scallions, for garnish

Method
 

  1. In a bowl, add beef (separate into smaller pieces if needed), cornstarch, white pepper, and garlic powder. Mix until evenly combined.
  2. Heat a large frying pan over medium-high heat and add olive oil.
  3. Add the coated beef and fry for 2 - 3 minutes until golden brown and just cooked. Cook in batches if needed as to not over crowd pan.
  4. Remove the beef from the pan, add a drizzle of olive oil, add the veggies, and a sprinkle of salt and black pepper.
  5. Sauté until veggies are softened, about 6-7 minutes.
  6. In the meantime, heat up udon noodles per package directions, drain, toss with a tsp of oil to avoid sticking, and set aside.
  7. In a small bowl, mix together sauce ingredients.
  8. Once veggies are done, add back in beef, noodles, and sauce. Toss until evenly combined.
