Mango Avocado Salsa
1avocado,diced
1smallmango,diced
1jalapeño, seeds removed for less spice
1smallshallot,finely chopped*
¼cupcilantro,chopped
juice of 1 lime

Instructions
Salmon
Cut salmon into about 6 even strips. In a small bowl combine seasonings and season all sides of salmon. Cover then set aside in fridge while you prepare the salsa.
Once ready to cook, heat a cast iron skillet over medium heat.
Cook salmon for about 2-3 minutes on all sides.
Mango Avocado Salsa
Combine all salsa ingredients in a small bowl. Salt to taste.
*for a less pungent onions taste, soak diced onion in cold water then drain before adding to salsa.
Tacos
In the same pan the salmon was cooked, heat the tortillas on both sides for about a minutes until warmed and softened.
To serve, add a piece of salmon, mash it down slightly with a fork. Top with salsa and a squeeze of lime, if preferred.
