These Banana Chocolate Chip Baked Oats are the perfect quick and healthy breakfast. Basically banana bread disguised as oatmeal, but I’m not complaining! Made with wholesome and nutritious ingredients, it’s a great way to start your day.

SERVING THE BAKED OATS
I typically slice my baked oats once they’ve cooled completely then store it in an airtight container in the fridge. Once ready to eat, I take a slice out, and heat it for about 20-30 seconds in the microwave then top with a little bit of peanut butter.

Banana Chocolate Chip Baked Oats
Ingredients
- 2 small-medium ripe bananas
- 1 egg
- ¼ cup maple syrup
- 1 tsp vanilla extract
- ¼ cup plain almond milk
- 1 cup old-fashioned oats
- ½ cup oat flour
- 2 tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp salt
- 2 tbsp ground flax seed
- 1 tsp baking powder
- ¼ cup chocolate chips
Optional Toppings
- peanut butter
- banana slices
Instructions
- Preheat oven to 350°F.
- In a medium sized bowl, mash the bananas. Then mix in egg, maple syrup, vanilla extract and almond milk until evenly combined. Mix in remaining ingredients.
- Lightly oil a 6×9 baking dish. Add in oats and spread out evenly. Top with extra chocolate chips if desired.
- Bake for 25-28 minutes. Let sit for at least 10 minutes before cutting into. Drizzle with peanut butter and top with bananas for serving.
