Chia Pudding Variations
One reason I love chia seeds pudding is because it’s super versatile and can be made into so many flavor combinations. I also enjoy adding them into overnight oats for extra fiber and protein, like in this Blueberry Chia Overnight Oat Recipe or into a Chia Seed Jam to use in place of store bought jelly/jam as a lower sugar alternative
Strawberry Chia Seed Pudding
Ingredients
- 1 cup full fat coconut milk
- 1 cup strawberries, frozen or fresh
- ⅓ cup chia seeds
- 2 tbsp maple syrup
- 2 tsp vanilla extract
- 1 5.3 oz container strawberry greek yogurt
optional topping
- crushed freeze dried strawberries
- granola
Instructions
- To a blender add strawberries and coconut milk. Blend until smooth.
- To a bowl, add the blended strawberry milk, chia seeds, maple syrup and vanilla. Mix until evenly combined.
- Chill in the fridge for at least two hours or overnight.
- Divide chia seeds pudding and yogurt into 3 portions. Top with any preferred toppings and enjoy.
