Turning my Fudgy Sweet Potato Brownies into the cutest brownie bites for Valentines day.

Fudgy Sweet Potato Brownie Bites

Servings 14 brownie bites

Ingredients
  

Brownies

  • 1 cup mashed sweet potato
  • ½ cup peanut butter
  • ½ cup maple syrup
  • 1 tsp vanilla
  • 1½ tbsp melted coconut oil
  • ½ cup cocoa powder
  • ¾ cup oat flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ⅓ cup semi-sweet chocolate chips

For topping

  • ¼ cup semi-sweet chocolate chips
  • 1 tsp coconut oil
  • 2 tbsp freeze dried strawberries, grounded into a powder
  • flakey salt

Instructions
 

  • Pre heat oven to 350°F.
  • Whisk together in a bowl sweet potatoes, peanut butter, maple syrup, vanilla, and coconut oil until evenly combined.
  • Add in remaining ingredients until just combined. Batter will be thick.
  • Line a 6×9 inch baking dish with parchment paper and press in brownie mix. Then top with extra chocolate chips.
  • Bake in oven for 18-22 minutes.
  • Let rest for at least 20 minutes before using heart-shaped cookie cutter to cut out 14 brownies.
  • In a small bowl, heat chocolate chips and coconut for 20 seconds stir until smooth. of chips are not melted heat another 10 seconds until smooth.
  • Place strawberries into a small plastic bag and use hand or bottom of a pan to pound into a powder.
  • Dip the tops of the brownie bites into the chocolate then sprinkle with flaky sea salt and strawberry crumbs. Set aside for chocolate to harden.
