They’re similar to pumpkin bread, but baked in a larger dish to spread out more to be flatter so you can cut them into bite size pieces.

Soft-Baked Pumpkin Chocolate Chip Bars
Ingredients
Dry Ingredients
- 1 cup all-purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- 2 tsp pumpkin spice
- ½ tsp cinnamon
- ¼ tsp salt
Wet Ingredients
- ¾ cup pumpkin puree, not pumpkin pie filling
- ⅓ cup melted coconut oil
- ½ cup coconut sugar
- 1 tsp vanilla
- ¾ cup chocolate chips
Instructions
- Preheat oven to 350°F.
- In a small bowl, whisk together dry ingredients until evenly combined.
- In a larger bowl, whisk together wet ingredients, except chocolate chips, until evenly combined.
- Add dry ingredients to wet ingredients and mix with a spatula until just combined then fold in chocolate chips.
- Grease an 8" x 8" baking pan and add in batter. Top with additional chocolate chips if preferred.
- Bake for 25-30 minutes or until a knife or toothpick in the center comes out clean. Remove from oven then let sit for at least 15 minutes before cutting into. Cut into equal squares and enjoy.
