These Soft-Baked Pumpkin Chocolate Chip Bars are about to be you new favorite fall treat! They’re fluffy, moist and have a cake-like texture that will melt in your mouth.

WHAT ARE PUMPKIN BARS?

They’re similar to pumpkin bread, but baked in a larger dish to spread out more to be flatter so you can cut them into bite size pieces.

Soft-Baked Pumpkin Chocolate Chip Bars

Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 2 tsp pumpkin spice
  • ½ tsp cinnamon
  • ¼ tsp salt

Wet Ingredients

  • ¾ cup pumpkin puree, not pumpkin pie filling
  • ⅓ cup melted coconut oil
  • ½ cup coconut sugar
  • 1 tsp vanilla
  • ¾ cup chocolate chips

Instructions
 

  • Preheat oven to 350°F.
  • In a small bowl, whisk together dry ingredients until evenly combined.
  • In a larger bowl, whisk together wet ingredients, except chocolate chips, until evenly combined.
  • Add dry ingredients to wet ingredients and mix with a spatula until just combined then fold in chocolate chips.
  • Grease an 8" x 8" baking pan and add in batter. Top with additional chocolate chips if preferred.
  • Bake for 25-30 minutes or until a knife or toothpick in the center comes out clean. Remove from oven then let sit for at least 15 minutes before cutting into. Cut into equal squares and enjoy.
