This quick and easy BREAKFAST BURRITO incorporates all the classic breakfast ingredients: scrambled eggs, crispy potatoes, turkey bacon, guacamole and salsa.

Breakfast Burrito
Ingredients
- 1 burrito sized tortilla
- 2 eggs
- 2 pieces turkey bacon
- ⅓ cup cooked potatoes
- 2-3 tbsp red salsa
- 2-3 tbsp guacamole or sub for avocado slices
- 2 tbsp olive oil, divided
Instructions
- Heat 1 tbsp of olive oil in a pan to medium heat, add the bacon and cook until crispy, about 3-4 minutes per side. Set on a paper towel to drain oil.
- Add potatoes to pan to reheat and crisp up. Add to tortilla once hot.
- Crack then whisk eggs. Season with salt and pepper. Add remaining oil to pan to heat then add in eggs to cook until desired doneness. Top the potatoes with the eggs and bacon.
- Add guacamole and salsa on top.
- To wrap, tuck in sides then roll tortilla up enclosing all the filling. Place seam side down in the pan on medium heat, heat until golden brown. Flip and brown other side if preferred for 2-3 minutes. Cut in half and enjoy.
