Cookie Dough Blizzard

This Cookie Dough Blizzard is a perfect guilt-free summer treat made with whole ingredients. It’s thick, creamy and super easy to make.

Cookie Dough

This cookie dough is made egg-free so it’s perfect for snacking on as is. They’re made with only 6 ingredients and come together in 5 minutes.

Blizzard Base

This ice cream base is thick, creamy and dairy-free. I include steamed then frozen cauliflower to give the smoothie a creamer texture with lower carbs. You won’t taste it in the smoothie since it takes on the flavor of the other ingredients.

Cookie Dough Blizzard

Servings: 2 small blizzards

Ingredients Method

Ingredients
  

Cookie Dough
  • ½ cup cashew butter
  • 1 tbsp maple syrup
  • 1 tsp vanilla
  • ¾ cup almond flour
  • 3 tbsp mini chocolate chips
  • pinch of salt
Blizzard
  • 2 small frozen bananas
  • 1 cup steamed then frozen cauliflower florets
  • 2 tbsp cashew butter
  • 1 tbsp maple syrup
  • 2 tsp Cinnamon
  • ½ cup plain almond milk
  • 2 scoops Collagen powder, optional

Method

  1. Blend all the ingredients, minus the chocolate chips, together in a food processor or blender until evenly combined. Then add chocolate chips and pulse a few times to incorporate. Scoop out ½ tablespoon sized balls then set aside in fridge. Scrape out food processor or blender to prep for blizzard.

  1. Blend all ingredients together until smooth. Add in additional chocolate chips if preferred. Set ice cream and serving glasses in freezer to chill for 20 minutes.
  2. When ready scoop some ice cream into glasses. Crumble two cookie dough balls on top then add in another layer of ice cream. Top with additional cookie dough balls.
