Arugula Pesto
Ingredients
- 3 cups arugula, packed
- ⅓ cup grated parmesan
- 1-2 tbsp minced garlic
- ¼ cup walnuts
- juice of ½ – 1 lemon
- ½ cup olive oil
- salt and pepper, to taste
Instructions
- Place all ingredients except oil, start with lesser amount if included, in a blender or food processor.
- Start blending on low and slowly drizzle in oil until smooth.
- Taste and adjust to preference.
