Arugula Pesto

Arugula pesto made with fresh arugula, walnut, lemon, garlic and parmesan cheese.

Use up your extra arugula with this lemon-y garlic pesto. Goes great with pasta, in a sandwich or on some avocado toast! Comes together in minutes and you can easily double the recipe and save the leftovers to use throughout the week.

Arugula Pesto

Print Recipe
Course sauce, Side Dish
Servings 1 heaping cup

Ingredients
  

  • 3 cups arugula, packed
  • ⅓ cup grated parmesan
  • 1-2 tbsp minced garlic
  • ¼ cup walnuts
  • juice of ½ – 1 lemon
  • ½ cup olive oil
  • salt and pepper, to taste

Instructions
 

  • Place all ingredients except oil, start with lesser amount if included, in a blender or food processor.
  • Start blending on low and slowly drizzle in oil until smooth.
  • Taste and adjust to preference.
