Arugula Pesto

Course sauce, Side Dish
Servings 1 heaping cup

Ingredients
  

  • 3 cups arugula, packed
  • cup grated parmesan
  • 1-2 tbsp minced garlic
  • ¼ cup walnuts
  • juice of ½ - 1 lemon
  • ½ cup olive oil
  • salt and pepper, to taste

Instructions
 

  • Place all ingredients except oil, start with lesser amount if included, in a blender or food processor.
  • Start blending on low and slowly drizzle in oil until smooth.
  • Taste and adjust to preference.
