Super easy and simple Small Batch Almond Granola. Perfectly sweet and a little salty – it makes for a great crunchy addition to any yogurt bowl.

YOU’LL LOVE THIS HOMEMADE ALMOND GRANOLA

  • Small batch: this recipe makes the perfect amount to last the week so you can have just enough crunchy granola topping to add your yogurt or oatmeal bowl every morning.
  • Vegan friendly: this recipe uses maple syrup and coconut sugar for sweetener instead of honey.
  • Classic flavors: this recipe doesn’t have any overly strong spices so the subtle cinnamon and vanilla flavors pair perfectly with anything!

Small Batch Almond Granola

Servings 2 cups

Ingredients
  

  • 3 tbsp maple syrup
  • 3 tbsp coconut oil, melted
  • 1 tsp vanila extract
  • 1 tbsp coconut sugar
  • ¼ cup almonds, salted or unsalted
  • 1 cup old-fashioned rolled oats
  • 2 tbsp ground flax seeds
  • ½ tsp cinnamon
  • ¼ tsp salt

Instructions
 

  • preheat oven to 325°F.
  • In a bowl combine, maple syrup, melted coconut oil, vanilla and sugar until evenly combined.
  • Roughly chop almonds and add into bowl along with oats, flax seeds, cinnamon and salt. Mix until evenly coated.
  • Evenly spread out mixture on a baking sheet lined with parchment paper. Bake for 10 minutes.
  • Stir mixture and bake for another 10 minutes.
  • Remove from oven and let cool completely before breaking into pieces.
  • Store in an airtight container for up to 5 days.
