Buffalo Chicken Quesadillas are loaded with juicy pulled chicken, spicy buffalo sauce, and mozzarella cheese. These delicious quesadillas are not only easy to make but are ready in just minutes.
Perfect for Leftover Chicken
This recipe is perfect to make with that little bit of leftover chicken you have in the fridge. Simply mix it up with buffalo sauce and add in cheese and you have a super quick meal ready to eat with little cooking!
Ingredients
- Tortillas – my personal favorite is the whole wheat low carb ones from trader joe’s that are also high in fiber!
- Buffalo Sauce – keep it simple and buy a store bought version, I like the New Primal’s sauce.
- Mozzarella Cheese
- Pulled Chicken – the perfect recipe for some left over chicken you may have sitting in the fridge.

Buffalo Chicken Quesadilla
Ingredients
- 4 small low carb tortillas I use the carb savvy ones from trader joe's
- 1 cup cooked pulled chicken
- ¼ cup buffalo sauce
- ½ cup low-fat shredded mozzarella
- butter for cooking
Instructions
- Spread butter on one side of all the tortillas. Mix chicken with buffalo sauce then spread out between the two tortillas. If using large burrito wrap, spread out all of chicken on half the tortilla.
- Sprinkle cheese on top of chicken then place other tortilla on top. Or fold over tortilla if using a burrito wrap.
- Over medium heat, place tortilla and cook until golden brown, about 2-3 minutes then flip for another 2-3 minutes.
- Cut each quesadilla into 6 triangles and serve with extra buffalo sauce if desired.
