Fudgy Sweet Potato Brownies

These sweet potato brownies are fudgy, rich and decadent. They’re also naturally sweetened thanks to the use of sweet potato.

WHY ADD SWEET POTATOES TO BROWNIES?

Sweet potatoes may seem like a weird ingredient to add to brownies, but hear me out. They add a lot of moisture, natural sweetness and give these brownies a great fudgy texture. The potatoes also help act as an egg replacement, helping to bind the batter while keeping the brownies most and rich.

Let’s also not forget the added nutritional benefits from using sweet potatoes. They’re a great source of beta-carotene, which gets converted to vitamin A in the body, contain calcium and iron and many other vitamins and minerals.

Brownies with ice cream is one of my favorite dessert combos. And since I’m prone to eating the whole thing I like to make them as healthy (but tasty) as possible.

Not only are these brownies healthier than your usual mix, they’re naturally sweetened with sweet potatoes, but they’re also super easy to make. All you’ll need is 10 ingredients and one bowl to make these delicious brownies.

INGREDIENTS

  • Sweet potatoes – 2 medium or 1 large potato
  • Maple syrup – real maple syrup, I know it’s more expensive, but it taste so much better
  • Peanut butter – natural peanut butter without any extra additives. Can also sup almond butter.
  • Coconut oil – melted then cooled
  • Vanilla
  • Cacao powder – can also sup cocoa powder, both work great!
  • Oat flour – make your own by blending up oats in a blender or food processor.
  • Chocolate chips – I love the added melty chocolate chips on top and throughout the brownies.
  • Baking powder
  • Salt – the added flakey salt on top is the perfect balance to these sweet treats

Fudgy Sweet Potato Brownies

Course Dessert
Servings 12 brownies

Ingredients
  

  • 1 cup mashed sweet potato
  • ½ cup peanut butter
  • ½ cup maple syrup
  • 1 tsp vanilla
  • 1½ tbsp melted coconut oil
  • ½ cup cacao powder
  • ¾ cup oat flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ⅓ cup chocolate chips, plus extra for topping
  • flakey sea salt, optional for finishing garnish
  • dairy-free ice cream for serving, optional

Instructions
 

  • Pre heat oven to 350°F.
  • Whisk together in a bowl sweet potatoes, peanut butter, maple syrup, vanilla, and coconut oil until evenly combined.
  • Add in remaining ingredients until just combined.
  • Line a 6×9 inch baking dish with parchment paper and press in brownie mix. Top with extra chocolate chips.
  • Bake in oven for 18-22 minutes. Let rest for at least 10 minutes before cutting. Top with flakey salt and serve with ice cream.
