Fudgy Sweet Potato Brownies

Ingredients
  

  • 1 cup mashed sweet potato
  • ½ cup peanut butter
  • ½ cup maple syrup
  • 1 tsp vanilla
  • tbsp melted coconut oil
  • ½ cup cacao powder
  • ¾ cup oat flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • cup chocolate chips, plus extra for topping
  • flakey sea salt, optional for finishing garnish
  • dairy-free ice cream for serving, optional

Instructions
 

  • Pre heat oven to 350°F.
  • Whisk together in a bowl sweet potatoes, peanut butter, maple syrup, vanilla, and coconut oil until evenly combined.
  • Add in remaining ingredients until just combined.
  • Line a 6x9 inch baking dish with parchment paper and press in brownie mix. Top with extra chocolate chips.
  • Bake in oven for 18-22 minutes. Let rest for at least 10 minutes before cutting. Top with flakey salt and serve with ice cream.
