Homemade Strawberry Pop Tarts

Everyone’s favorite childhood breakfast pastry can now be easily made from home! Made with homemade chia seed jam and paired store bought crust to save time. These pop tarts are filled with a delicious strawberry jam and topped with a lemon-y strawberry icing.

This recipe is super easy and very versatile. You can fill it with any flavor jam and whip them up without any fancy baking tools. I’m using a store bought dough but by all means you can make your own pie crust recipe for this too!

MODIFICATIONS:

  • The dough: the recipe calls for pie crust in order to make these like pop tarts but swap it out for puff pastry and you get that flakey crust just like a toaster strudel. (picture below)
  • The filling: Swap out the strawberry chia jam for blueberry or any other berry jam, the possibilities are truly endless!

STORING LEFTOVERS

Although best the day of, you can store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a toaster oven at 375 degrees for 5-7 minutes until warm.

Homemade Strawberry Pop Tarts

Servings 6 poptarts

Ingredients
  

  • ¾ cup Strawberry chia seed jam, Recipe linked above
  • 2 sheets pie crust, or puff pastry if making toaster strudels

Icing

  • ½ cup powdered sugar
  • 1-2 tsp lemon juice
  • 1-2 tsp almond milk
  • 2 tsp strawberry chia jam, recipe linked above

Instructions
 

  • Take out the dough to thaw to room temperature or until pliable, about 50 minutes.
  • Prepare chia jam. Once cooled, blend until smooth in a blender or food processor.
  • Preheat oven to 350 degrees.
  • Using a pizza cutter or sharp knife, cut each sheet into 6 equal rectangles.
  • Place 6 rectangles on a parchment lined baking sheet. Top each with about 2 tbsp of jam. Cover each with the other 6 rectangles and use a fork to crimp around the edges.
  • Brush tops with water and transfer to oven to bake for about 18-22 minutes or until golden brown.
  • In the meantime, make the icing by combining all ingredients in a bowl until smooth.
  • Once poptarts are done baking, transfer to a wire rack to cool. Spoon on icing and let set for a couple minutes before enjoying!
