This recipe is one of my favorites! It’s a healthier spin on nachos made with crispy homemade sweet potato chips, smokey and tangy pulled BBQ chicken and topped with beans, cheese and guacamole.
These nachos are super easy to make and feel indulgent but without nearly as many calories as your traditional loaded nachos. Perfect for a week night dinner or enjoying while you watch the big game.
INGREDIENTS
- Baked Sweet Potato Chips – I used my baked sweet potato chip recipe as the base for my nachos and they’re so addicting and delicious! A great healthier alternative than tortilla chips.
- BBQ Pulled Chicken: For the chicken I used a zero sugar BBQ sauce for less calories as well a healthier version of traditional BBQ sauce that tends to have a lot of added sugar. Two great brands I’ve used are Primal Kitchen’s and G Hughes Smokehouse.
- Black Beans: I pretty much always have a can of black beans in my pantry so it’s my most used bean, but kidney or pinto beans, (or honestly pretty much any bean you have on hand) will work great in this as well!
- Cheese: I used a low-fat Mexican blend cheese, but even just a mozzarella or cheddar can be substituted!
- Additional toppings: I love finishing this off with a little guacamole or avocado and a squeeze of lime!

BBQ Chicken Sweet Potato Nachos
Ingredients
- 1 recipe baked sweet potato chips, linked above
- 2 chicken breast
- 1 tbsp olive oil
- 1 tsp each: garlic powder, onion powder, chilli powder
- ½ tsp each: cumin and smoked paprika
- ⅓ cup no-sugar BBQ sauce
- ½ (14-oz) can black beans
- ¼ cup grated Mexican blend cheese
Additional toppings
- slices of lime
- avocado or guacamole
- salsa
Instructions
- Prepare baked sweet potato chips.
- Pre heat oven to 375 degrees.
- Mix all the seasoning powders together in a small bowl.
- Hold the chicken breast flat against a cutting board with the palm of your hand. Using a sharp knife, cut the chicken in half horizontally into two thinner pieces. Repeat for remaining breast. Season both sides of chicken with seasoning mix.
- Add oil to a pan over medium-high heat. Place two pieces of chicken in the pan to cook for 5-7 minutes on each side or until internal temperature reaches 165 degrees in the thickest part. Once cooked set aside on a plate to cool for at least 5 minutes and cook remaining chicken.
- Once cooled, use two forks to pull apart chicken into smaller pieces. Add chicken back into pan.
- Over low heat mix in the BBQ sauce and let cook for another 3 minutes until warmed through.
- To build nachos, line a baking sheet or small cake round, with foil. Layer in the chips. Use a slotted spoon to add in beans, followed bu chicken then cheese. Bake in the oven for 7-10 minutes or until cheese has melted.
- Top with any additional preferred toppings.
