Garlic Parmesan Potato and Cauliflower Mash

The best creamy, garlic-y, and lower carb potato and cauliflower mash. Delicious and easy to make, you won’t even be able to tell this is an healthier alternative to traditional mashed potatoes.

Potato and Cauliflower

I like to use a mix of potatoes and cauliflower when making a lower-carb mash to get the best of both worlds. I like the taste of regular potatoes but I can increase the volume without increasing the carbs and calories by adding cauliflower.

This recipe is super versatile and you can definitely play with the potato to cauliflower ratio as you please.

VARIATIONS:

  • Herbs: thyme and or rosemary would be perfect adds to this dish. Remove the leaves from the stem and roughly chop the rosemary then add it into the pureed mash.
  • Cheese: to make this even cheesier you can mix in some cheddar cheese.
  • Seasoning: Everything But The Bagel seasoning would be a great twist to add some different flavors to the dish.

Garlic Parmesan Potato and Cauliflower Mash

Ingredients
  

  • 1 pound russet or yukon gold potatoes
  • 12 ounces cauliflower florets, or 1 head
  • 1 tbsp pre-minced garlic, or 1-2 fresh grated cloves
  • 2-3 tbsp plain unsweetened almond milk
  • 3 tbsp butter, I used Original Earth Balance
  • ⅓ cup grated parmesan
  • salt and pepper to taste

additional toppings

  • herbs: chives, rosemary or thyme
  • fried onions

Instructions
 

  • Bring a large pot of water to a boil.
  • Peel then cut potatoes into 2-3 inch pieces. Add into boiling water.
  • In the meantime, wash and cut any larger pieces of the cauliflower so they're all about the same size. Add into boiling water as well. Cook potatoes and cauliflower until fork tender about 15-20 minutes.
  • Drain the potatoes and cauliflower into a strainer and let strain for a couple minutes to make sure all water is removed.
  • Add potatoes and cauliflower into the empty pot or large bowl. Add in garlic, 2 tbsp almond milk, cheese, salt and pepper.
  • Mash or blend using a potato masher or immersion blender until creamy. Add more milk if too thick. Taste and adjust to preference.* Top with any additional toppings.
  • *Note: Once mix is creamy, use a spoon to mix further when adjusting to taste.
