Pumpkin Protein Waffles
Ingredients
Wet Ingredients
- ½ cup pumpkin puree
- ½ cup plain greek yogurt, (or 5.3oz cup)
- 1 tsp vanilla
- ½ cup plain almond milk
Dry Ingredients
- ½ cup oat flour or almond flour
- 1 cup all purpose flour
- 2 tsp pumpkin spice
- 1.5 tbsp coconut sugar
- 1.5 tsp baking powder
- ¼ tsp salt
- 30 g protein powder – plain or vanilla works, or I used cinnamon cereal flavored
- chocolate chips, optional
Instructions
- In a large bowl, whisk all the wet ingredients together until evenly combined.
- Add in remaining dry ingredients, except chocolate chips, and mix until just combined.
- Fold in chocolate chips.
- Heat waffle iron and spray with oil. Pour in 1/2 cup of batter and cook until crispy on the outside and enjoy!
