Homemade Pumpkin Spice Protein Waffles

Crispy golden on the outside, and fluffy on the inside, these waffles are a must make! Using only one bowl and 12 ingredients, they’re super easy and come together even quicker!

These waffles are packed pumpkin spice flavor and loaded with 12g of protein in each waffle. They’ll keep you full and satisfied, it’s the perfect way to start your morning.

Have extra time on the weekend? Double the batch and freeze the extras. Pop them in the toaster to heat up when you’re ready to eat for an easy weekday breakfast!

Pumpkin Protein Waffles

Servings 5 waffles
Calories 192 kcal

Ingredients
  

Wet Ingredients

  • ½ cup pumpkin puree
  • ½ cup plain greek yogurt, (or 5.3oz cup)
  • 1 tsp vanilla
  • ½ cup plain almond milk

Dry Ingredients

  • ½ cup oat flour or almond flour
  • 1 cup all purpose flour
  • 2 tsp pumpkin spice
  • 1.5 tbsp coconut sugar
  • 1.5 tsp baking powder
  • ¼ tsp salt
  • 30 g protein powder – plain or vanilla works, or I used cinnamon cereal flavored
  • chocolate chips, optional

Instructions
 

  • In a large bowl, whisk all the wet ingredients together until evenly combined.
  • Add in remaining dry ingredients, except chocolate chips, and mix until just combined.
  • Fold in chocolate chips.
  • Heat waffle iron and spray with oil. Pour in 1/2 cup of batter and cook until crispy on the outside and enjoy!
