Turkey Bacon Onion Jam

Ingredients
  

  • ½ lb turkey bacon, or bacon of choice
  • 1 large sweet or yellow onion
  • 2 tbsp olive oil
  • 1 tsp grated or minced garlic
  • 3 tbsp coconut sugar, or brown sugar
  • ¼ tsp smoked paprika
  • cup water

Instructions
 

  • Cut bacon into ¼ - inch pieces.
  • In a pan over medium heat, crisp bacon in olive oil then remove to a paper towel lined plate to drain.
  • In the mean time, finely dice onions to about the same size as the bacon.
  • Once bacon is cooked them removed from pan, add in onions. Stirring often, cook until caramelized, about 12-15 minutes.
  • Stir in garlic, sugar, paprika, bacon and water. Bring to a simmer over low-medium, heat and let cook until thickened, stirring occasionally. About 4-6 minutes.
  • Remove from heat and let cool to room temperature before adding to an air tight container to store. Can last in fridge for up to two weeks.
