The Best Sweet Potato Chocolate Chip Cookies

Ingredients
  

Wet Ingredients
  • ½ cup mashed sweet potato
  • cup coconut sugar
  • ¼ cup coconut oil, metled and cooled
  • 2 tsp vanila
Dry Ingredients
  • 1 & ¼ cups almond flour
  • ¾ cup unbleached all-purpose flour
  • 2 tsp cinnamon
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp sea salt
  • ½ cup chocolate chips

Method
 

  1. Mix all wet ingredients in a large bowl until evenly combined.
  2. Add in all dry ingredients (except chocolate chips) until it just comes together. Fold in chocolate chips.
  3. Using a cookie scoop, scoop into cookie dough balls and then flatten out into rounds on a parchment lined baking sheet.
  4. Transfer to fridge to let chill for at least 30 minutes.
  5. Preheat oven to 375, then transfer to oven to bake for 8-10 minutes.
