Method
- Mix all wet ingredients in a large bowl until evenly combined.
 - Add in all dry ingredients (except chocolate chips) until it just comes together. Fold in chocolate chips.
 - Using a cookie scoop, scoop into cookie dough balls and then flatten out into rounds on a parchment lined baking sheet.
 - Transfer to fridge to let chill for at least 30 minutes.
 - Preheat oven to 375, then transfer to oven to bake for 8-10 minutes.
