Tahini Banana Bread

Ingredients
  

Wet Ingredients
  • 2 ripe bananas
  • 2 tbsp coconut oil, melted and cooled
  • 1 egg, at room temperature
  • 1 tsp vanilla
  • cup tahini
  • 3 tbsp maple syrup
  • ½ tsp apple cider vinegar
Dry Ingredients
  • cup oat flour
  • tsp cinnamon
  • ½ tsp baking powder
  • ½ tsp baking soda
  • pinch of salt
  • chocolate chips, as much as desired

Method
 

  1. Preheat oven to 350°F.
  2. In a medium bowl, mash bananas with a fork.
  3. Add in remaining wet ingredients and whisk until well combined.
  4. Add in all dry ingredients, except chocolate chips and mix until just combined. Mix in chocolate chips and mix again just until evenly combined.
  5. Pour batter into a parchment paper lined loaf pan, top with extra chocolate chips.
  6. Bake for 25-30 minutes until a knife inserted into the middle comes out clean. Allow to cool for at least 10 minutes before slicing.
