Jalapeño Cilantro Dressing

Servings: 1 cup
Course: sauce

Ingredients
  

  • 1 small Jalapeño, seeds and stem removed
  • 2 cups cilantro
  • 2 garlic cloves
  • zest and juice of 1 lime
  • 4 tsp red wine vinegar
  • 2 tbsp honey
  • ½ tsp cumin
  • ½ cup olive oil

Method
 

  1. Cut jalapeño in half and remove the stem, seeds and veins (keep some seeds if you prefer it to be spicy). Add it to a blender or small food processor.
  2. Wash and dry cilantro. Remove the bottom inch of the stems and throw away. Then add cilantro into the blender or small food processor.
  3. Add remaining ingredients and blend until smooth. Store in fridge in an airtight container.
