Chia Seed Jam

Course: Breakfast, sauce

Ingredients
  

  • 16 ounces frozen berries (about 2 cups)
  • 3 tbsp water
  • 2 tbsp maple syrup
  • ½ tsp vanilla
  • 2 tbsp chia seeds
  • ½ tbsp lemon juice

Method
 

  1. Defrost frozen berries on the counter for about 5 minutes. Break up any big clumps.
  2. Pour berries into a small pot over medium heat. Add in water, maple syrup, and vanilla. Bring to a boil.
  3. Then reduce heat to a low simmer for 10-12 minutes, stirring occasionally. Mash berries a little bit as you stir to break them up.
  4. Remove from heat and stir in chia seeds and lemon juice. Taste and adjust for preference.
  5. Let sit to thicken until cooled. Stir occasionally to make sure chia seeds are incorporated.

Notes

*Note 1: depending if your berries are in season you may need more or less maple syrup to sweeten them.
**Note 2: For a smoother jam, once it has cooled place in a blender or food processor and blend until smooth. See pictures below for texture comparison.
