Chia Seed Jam

Course Breakfast, sauce

Ingredients
  

  • 16 ounces frozen berries (about 2 cups)
  • 3 tbsp water
  • 2 tbsp maple syrup
  • ½ tsp vanilla
  • 2 tbsp chia seeds
  • ½ tbsp lemon juice

Instructions
 

  • Defrost frozen berries on the counter for about 5 minutes. Break up any big clumps.
  • Pour berries into a small pot over medium heat. Add in water, maple syrup, and vanilla. Bring to a boil.
  • Then reduce heat to a low simmer for 10-12 minutes, stirring occasionally. Mash berries a little bit as you stir to break them up.
  • Remove from heat and stir in chia seeds and lemon juice. Taste and adjust for preference.
  • Let sit to thicken until cooled. Stir occasionally to make sure chia seeds are incorporated.

Notes

*Note 1: depending if your berries are in season you may need more or less maple syrup to sweeten them.
**Note 2: For a smoother jam, once it has cooled place in a blender or food processor and blend until smooth. See pictures below for texture comparison.
