Banana Chocolate Chip Protein Pancakes

Ingredients
  

Wet Ingredients
  • ½ cup mashed banana
  • 5.3 ounces ( or ½ cup) plain non-fat greek yogurt
  • ¾ cup plain almond milk, or your favorite non-dairy milk
  • 1 tsp vanilla
Dry Ingredients
  • ½ cup almond or oat flour
  • 1 cup unbleached all purpose flour
  • 1 tsp cinnamon
  • tsp baking powder
  • ¼ tsp salt
  • 30 g plain or vanilla protein powder
  • ¼ cup chocolate chips
For cooking,
  • 2 tbsp butter

Method
 

  1. In a large bowl, whisk together all the wet ingredients until evenly combined.
  2. Add in dry ingredients, except chocolate, and mix until evenly combined. Then stir in chocolate chips
  3. Lightly butter a nonstick skillet over medium heat. Once hot, scoop out ⅓ cup of batter and pour onto skillet. Once bubbling around the edges, about 3-4 minutes, flip pancakes over to cook for another 3-4 minutes. Repeat by butter skillet again and continue cooking pancakes in batches.
