Banana Chocolate Chip Cookies

Ingredients
  

Dry Ingredients
  • 1 & ¼ cup Almond Flour
  • ¾ cup All-purpose Flour
  • ¼ cup Coconut Sugar
  • 1 tsp Cinnamon
  • ½ tsp Baking Soda
  • ½ tsp Baking Powder
  • ¼ tsp Salt
Wet Ingredients
  • ½ cup Mashed Bananas (about 2 small bananas)
  • ¼ cup Coconut Oil, melted
  • 2 tsp Vanilla
  • ½ cup Chocolate Chips
  • ¼ cup Peanut Butter Chips, optional

Method
 

  1. Preheat oven to 375 degrees.
  2. In a medium bowl, combine all the dry ingredients together until evenly mixed.
  3. In a separate large bowl, peel then mash bananas.
  4. Mix in coconut oil and vanilla until evenly combined.
  5. Mix half of dry mix into wet mix until just combined then add in other half of dry mix and mix again until just combined.
  6. Fold in chocolate chips and peanut butter chips if using.
  7. Form into balls on a lined baking sheet.
  8. Bake for 8-10 minutes and cool slightly before serving.
