Tahini Banana Bread

Ingredients
  

Wet Ingredients

  • 2 ripe bananas
  • 2 tbsp coconut oil, melted and cooled
  • 1 egg, at room temperature
  • 1 tsp vanilla
  • cup tahini
  • 3 tbsp maple syrup
  • ½ tsp apple cider vinegar

Dry Ingredients

  • cup oat flour
  • tsp cinnamon
  • ½ tsp baking powder
  • ½ tsp baking soda
  • pinch of salt
  • chocolate chips, as much as desired

Instructions
 

  • Preheat oven to 350°F.
  • In a medium bowl, mash bananas with a fork.
  • Add in remaining wet ingredients and whisk until well combined.
  • Add in all dry ingredients, except chocolate chips and mix until just combined. Mix in chocolate chips and mix again just until evenly combined.
  • Pour batter into a parchment paper lined loaf pan, top with extra chocolate chips.
  • Bake for 25-30 minutes until a knife inserted into the middle comes out clean. Allow to cool for at least 10 minutes before slicing.
