Chicken Pita Sandwiches

Servings: 2 sandwiches

Ingredients
  

  • 1 cooked chicken breast
  • 1 avocado
  • 1 tomato
  • 2 pieces pita bread
  • 1 handful of spinach
  • salt and pepper

Method
 

  1. Reheat chicken until warm. Slice chicken into ½-inch thick pieces and set aside.
  2. Cut tomato into ¼-inch thick slices and season with salt and pepper to taste, set aside.
  3. Remove skin and pit from avocado. In a small bowl, mash avocado with salt and pepper to taste. Set aside.
  4. In a damp paper towel, wrap pita bread and microwave for about 10-15 seconds to soften.
  5. Remove pita from paper towel and cut along the edge to separate the top and bottom.
  6. Fill each pita with half the avocado spread, 2-3 slices of tomato, half the spinach, and chicken.
