Baked Sweet Potato Chips

Ingredients
  

  • 2-3 small to medium sized sweet potatoes
  • 1 tbsp olive oil
  • salt to taste

Instructions
 

  • Preheat oven to 275 degrees Fahrenheit.
  • Wash and dry sweet potatoes.
  • Using a mandoline slicer or sharp knife, cut the potatoes into thin rounds.
  • Toss sweet potatoes with olive oil and salt in a bowl.
  • Spread out on a baking sheet in a single layer.
  • Bake 40-50 minutes, flipping halfway. Keep an eye out during the last 10 minutes to avoid burning.
