Buffalo Chicken Quesadilla

Ingredients
  

  • 4 small low carb tortillas I use the carb savvy ones from trader joe's
  • 1 cup cooked pulled chicken
  • ¼ cup buffalo sauce
  • ½ cup low-fat shredded mozzarella
  • butter for cooking

Instructions
 

  • Spread butter on one side of all the tortillas. Mix chicken with buffalo sauce then spread out between the two tortillas. If using large burrito wrap, spread out all of chicken on half the tortilla.
  • Sprinkle cheese on top of chicken then place other tortilla on top. Or fold over tortilla if using a burrito wrap.
  • Over medium heat, place tortilla and cook until golden brown, about 2-3 minutes then flip for another 2-3 minutes.
  • Cut each quesadilla into 6 triangles and serve with extra buffalo sauce if desired.
