In a medium sized bowl, mash the bananas. Then mix in egg, maple syrup, vanilla extract and almond milk until evenly combined. Mix in remaining ingredients.
Lightly oil a 6x9 baking dish. Add in oats and spread out evenly. Top with extra chocolate chips if desired.
Bake for 25-28 minutes. Let sit for at least 10 minutes before cutting into. Drizzle with peanut butter and top with bananas for serving.
