Banana Chocolate Chip Baked Oats

Ingredients
  

  • 2 small-medium ripe bananas
  • 1 egg
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • ¼ cup plain almond milk
  • 1 cup old-fashioned oats
  • ½ cup oat flour
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 2 tbsp ground flax seed
  • 1 tsp baking powder
  • ¼ cup chocolate chips

Optional Toppings

  • peanut butter
  • banana slices

Instructions
 

  • Preheat oven to 350°F.
  • In a medium sized bowl, mash the bananas. Then mix in egg, maple syrup, vanilla extract and almond milk until evenly combined. Mix in remaining ingredients.
  • Lightly oil a 6x9 baking dish. Add in oats and spread out evenly. Top with extra chocolate chips if desired.
  • Bake for 25-28 minutes. Let sit for at least 10 minutes before cutting into. Drizzle with peanut butter and top with bananas for serving.
